Onion, sliced.
Garlic, crushed and chopped.
Tomatos, 2 cans.
Blue cheese.
Chillies (chopped fresh or dried).
Oregano.
Vinegar (balsamic best, but white can be used instead).
Olive oil.
Salt and pepper.
Pasta (large shapes work best).
Saute onion in ample olive oil until soft.
Add garlic and chilli and saute until aromatic.
Add tomatoes, vinegar, and oregano and cook till reduced.
Add blue cheese, salt, and pepper to taste.
Once smooth add cooked pasta and combine.
Serve.
Chopped baby spinach added to sauce at end.
